Vegan Protein Persian Lentil Stew



Ingredients:

  • 1/2 scoop ATOM Roti Protein.
  • 1 cup green or brown lentils.
  • 1 onion diced.
  • 1 potato diced.
  • 1 cup tomato paste.
  • 1 tsp garlic paste.
  • 1 tsp turmeric.
  • 1 tsp cumin.
  • ½ tsp cinnamon powder.
  • 1 tsp black pepper.
  • 1 tsp salt.
  • 2 tbsp olive oil.
  • Water as per required to adjust consistency. 

Preparation:
In a large pot, heat olive oil over medium heat. Add the chopped onion, and saute until onions become translucent. Stir in garlic paste, turmeric, cumin, cinnamon, and pepper. Add tomato paste, diced potato and washed lentils to the pot, and mix everything well to coat the lentils. Pour in the water, bring the mixture to boil, then reduce the heat to low. Cover the pot and let it simmer for about 30 minutes. The lentils and potatoes should be cooked well. Once the stew is cooked, add in ATOM Roti Protein, and season with salt and pepper to taste and simmer for 5 minutes. Squeeze in a bit of fresh lemon juice and garnish the stew with minced coriander. Enjoy the flavourful, healthy vegan lentil stew hot with basmati rice or with roti.
