Vegan Protein Blueberry Banana Muffins



Ingredients:
½ cup ATOM Plant Protein.
1 cup mashed bananas.
1 cup frozen blueberries.
¼ cup maple syrup.
¼ cup almond milk.
½ cup melted coconut oil.
1 ½ cup whole wheat flour.
1 tsp baking powder.
½ tsp baking soda.
½ tsp cinnamon powder.
1 tsp vanilla extract.
 

Preparation:
Preheat your oven to 3500F. Line a muffin tin with paper liners or lightly grease them with oil to prevent sticking. In a large mixing bowl, mash the ripe bananas with a fork until smooth. Add the maple syrup, almond milk, melted coconut oil, and vanilla extract. Mix until well combined. In a separate bowl, mix wheat flour, ATOM Plant Protein, baking powder, baking soda, ground cinnamon, and salt. Gradually, add the dry ingredients to the wet ingredients, stirring until well combined. The batter should be thick and lumpy. Gently fold in the blueberries until evenly distributed throughout the batter. Spoon the batter into the prepared muffin tin, filling each cup about ¾ full. Bake in the preheated oven for 20 minutes, allow the muffins to cool in the tin for 5 minutes. Enjoy the moist, flavourful, protein-rich muffins.
