Vegan Onion Rings



Ingredients:

  • 1 cup ATOM Roti Protein.
  • 2 large onions.
  • ½ c whole wheat breadcrumbs.
  • 2 tbsp corn flour.
  • ½ cup chickpea flour.
  • 1 tsp garlic powder.
  • 1 tsp onion powder.
  • 1 tsp paprika.
  • ½ tsp salt.
  • ½ tsp pepper powder.
  • ½ cup water.
  • 2 tbsp olive oil.

 

Preparation:
Preheat your oven to 4500F. Line a baking sheet with parchment paper, and lightly grease it with oil to prevent sticking. Peel the onions and slice them into ½-inch thick rings. Separate the rings and set them aside. Combine the ATOM Plant protein powder, corn flour, chickpea flour, garlic powder, onion powder, paprika, salt, and pepper powder. Add water and whisk well until all ingredients are well combined. Place one onion ring into the mix using your hand or a fork and toss until it’s coated well. Then dip the onion rings into the breadcrumbs and toss until it’s coated well. Place the onion ring on the lined baking sheet. Repeat the steps with the remaining onion rings. Spray the coated rings with olive oil to help them crisp up. Bake in the preheated oven for 15 minutes, flip once and bake for 5 minutes until they are brown and crispy.  Remove the onion rings from the oven and let them cool slightly. Enjoy them with pudina chutney, tomato sauce, or mayo.
