Sweet Potato Whey Muffins

 

Ingredients:

  • 1 cup cooked.
  • Mashed sweet potato.
  • 1 scoop ATOM Whey Protein (cookies & cream flavour)
  • 1 ½ cup wheat flour.
  • ½ tsp cinnamon powder.
  • ¼ tsp nutmeg powder.
  • 1 tsp baking soda.
  • 1 tsp vanilla extract.
  • ½ tsp salt.
  • ½ cup water.
  • ½ cup almond milk.
  • ¼ cup maple syrup.
  • ¼ cup melted coconut oil.

 

Preparation:
Preheat oven to 350
0F, and line a muffin tin with paper liners. In a mixing bowl, combine the mashed sweet potato, almond milk, maple syrup, vanilla extract, and coconut oil. In a separate mixing bowl, whisk together whole wheat flour, ATOM Whey, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet ingredients, and stir well until well combined. Fold gently, add in the chopped nuts if desired. Spoon the batter into the muffin tin, filling each cup about ¾ full. Bake in the preheated oven for 20 minutes. Allow the muffins to cool in the tin, transfer them to the plate and enjoy.
