Ingredients: 200g fresh paneer, 750ml milk, 2 tablespoons AS-IT-IS Peanut butter, 1/4 cup dry fruits mix (almonds, cashew nuts, raisins, walnuts, pistachios, dates), 1/4 cup jaggery syrup, 5-6 strands saffron, one tablespoon ghee.
Preparation: Pour milk into a thick-based large container, and let it boil for 10 minutes on a high flame (keep stirring milk when it’s boiling). Once milk thickens, add soaked, grated Paneer, AS-IT-IS Peanut butter, dry fruits and simmer on a medium flame for another 10 minutes. Keep stirring occasionally and scrape the sides. Turn off the flame when milk thickens and add saffron strands. Paneer Peanut Kheer is best when consumed hot or chilled.
(Before you add paneer to kheer, soak it for 15 minutes in hot water and then grate it on the side of the large holes on the grater).
