How to store peanut butter refrigerate or not

The answer to ‘should I refrigerate peanut butter’ depends on what type you have. Natural and commercial peanut butter behave differently because they have fundamentally different ingredient lists. Here’s the clear guide.

Natural vs Commercial Peanut Butter: Storage Rules

Type Refrigerate? Room Temp Shelf Life (Opened) Fridge Shelf Life (Opened)
Natural (peanuts + salt only) ✅ Yes, after opening 1–3 months (rancidity risk) 3–6 months
Commercial (with stabilisers/hydrogenated oils) Optional 2–3 months 6–12 months
Unopened (any type) Not required Up to 12 months 12–18 months

Why Natural Peanut Butter Needs the Fridge

Natural peanut butter contains only peanuts (and sometimes salt) — no hydrogenated oils or artificial stabilisers that commercial products use to prevent separation and extend shelf stability. Without these additives, peanut oil can undergo oxidative rancidity at room temperature within 1–3 months of opening. Rancid oils taste bitter and sour and lose nutritional value. Refrigeration slows this significantly.

Managing the Oil Separation Problem

Oil separation is natural and not a sign of spoilage. To manage it effectively: stir thoroughly before first use, then store the jar upside down in the fridge — the oil distributes back through the paste over time. Some people stir once and refrigerate, which effectively fixes the separation for weeks.

Frequently Asked Questions

Should peanut butter be refrigerated?
Natural peanut butter: yes, after opening. Rancidity risk within 1–3 months at room temperature. Commercial peanut butter with stabilisers: optional, shelf-stable at room temperature for 2–3 months.
How long does peanut butter last in the fridge?
3–6 months opened, up to 12–18 months unopened. Always check for off smells (rancidity) or mould regardless of date.
Why does natural peanut butter separate?
No stabilisers or hydrogenated oils to prevent separation. The peanut oils naturally rise over time. Stir before use and store upside down to redistribute the oil. Normal and not a sign of spoilage.
Does refrigerating make peanut butter hard?
Yes — significantly firmer. Let it warm at room temperature 10–15 minutes before use, or use it in shakes/smoothies where texture matters less.
Can peanut butter go bad?
Yes. Rancidity (fat oxidation): dark colour, bitter or sour smell. Mould: discard immediately. Rancid peanut butter is not acutely dangerous but should be replaced.

“Natural peanut butter belongs in the fridge after opening. Commercial peanut butter doesn’t need it but benefits from it. When in doubt: refrigerate.”

Natural: fridge after opening, 3–6 months. Commercial: cupboard or fridge, 2–3 months room temp. Stir, store upside down, check for rancidity.

I keep it in the fridge because I like my PB to be more on the firm side, and cool. Yes it’s a bit stiff when I take it out so I give it a good stir and then it spreads very well! Perfect for a favorite snack, on apple slices (Gala)! It’s also great on toast with a drizzle of raw honey, so delicious!
